After a mostly successful installation of Mac OS Sierra on my computer in Legacy boot mode (My computer is from 2009 and does not support UEFI), I was not able to get my ethernet adapter working and an ethernet adapter is needed to use the app store.
How do I use the NullEthernet kext if I don't have an EFI folder? Sorry if I missed any threads explaining this, I am new to this forum.

The macOS installer requires GPT. All GPT disks partitioned with Disk Utility have an EFI partition.
ACPI files go to EFI/Clover/ACPI/patched on the EFI partition ... it is the same for Clover UEFI as for Clover legacy.

Thanks, that worked
