Best workstation build?

My job is spent working in After Effects and Cinema 4D, and I'm thinking about doing a Hackintosh build. I have no experience with this, but I can follow instructions reasonably well so I'd like to give it a shot.
I don't have the knowledge to design this myself, so I'm wondering if anyone out there enjoys creating what I would maybe call "fantasy builds." Something that would compete with a high-end Mac Pro, but without the $12K price tag. My knowledge is flimsy at best and have no real way of making these decisions with confidence.

Also...I happen to have an old '08 MacPro tower, could the case be used for a hackintosh?

We don't allow members to hire others to build a CustoMac for them. You can certainly model your Pro build after another that you find in Golden / User builds and then do the install of macOS yourself. If you don't go through the process of learning at least the basics you won't be a good candidate to be a CustoMac owner. It's not like buying a Mac Pro and then leaving the rest up to Apple to take care of. That's why we have the Sierra Desktop Support thread so that you can get help with the inevitable issues that will come up for most everyone going down this path.

Ah, I see I was a little unclear in my post. I wasn't looking to hire someone to actually build anything for me, I just thought someone with more knowledge than I would enjoy creating a shopping list for me. I used to work with a guy who enjoyed customizing maxed-out MacPros on Apple's website, with no intent of ever purchasing. I kind of understand that impulse and thought perhaps it was a common thing on a board like this. I am actually looking forward to assembling this myself, and the inevitable maintenance would be a learning experience for me, but I'd really have to know that the system I create was at least starting out on the right foot, that I hadn't set myself up for failure because I was ignorant of some small detail about compatibility or something like that. I don't want to drop a few grand on a project that's doomed to failure because I didn't know Part A would cause some unforeseen problem with Part B. The reason I don't just opt for the Custom MacPro listed here is it doesn't really seem like it's truly maxed out, which is what I was looking for.

All that being said, I feel like I am being the kind of member that annoys me on other boards I belong to, and I really don't want to be that guy, so I'll just pursue this on my own. Sorry for any bother I have caused.

The current maxed out workstation build is not in the Buyer's Guide because it doesn't have support for the chipset yet. It would include an Asus X99 II motherboard, an I7-6950X CPU and 128GB of ram. It's really overkill for the majority of people here. It's also incredibly expensive with that much ram and the CPU cost. If you have that kind of budget and a good amount of time before you actually need a fully working system you could try that. With no previous experience you'd be spending a lot of time on it to get full functionality. A Z170X system like the CustoMac Pro build and 64 GB of ram and a 980 Ti is a better way to start.
Should be able to handle what you are doing with the Adobe softwares you mentioned. The older (non-pascal) Titan X would also work if you need that powerful of a graphics card.
