Force iTunes to restore iOS 7.0.6 to my iPhone

iOS 7.1 will not allow users to jailbreak.

how can I prevent iTunes from downloading the new iOS?

I want to have a backup of iTunes so it will ALWAYS restore iOS 7.0.6 even if I try to do this process 2-3 months from now.

I was thinking making a full backup of my computer using Carbon Copy Cloner

But are there any other tricks that are more sophisticated?

For example, could I use Little Snitch to prevent iTunes to connect to a certain server or IP address?

I just want iTunes to be 'stuck' at iOS 7.0.6

What you can do is use "SemiRestore7" it is a free tool ( be sure to download the good one), if your idevice run correctly and is jailbreak, install the tweak "OpenSSH" and you'll be able te restore any idevice in his current version without loosing jailbreak.
