I got a DVI to VGA adapter and using DVI seems to have fixed the resolution changing issue. The adapter I am using is the one from Apple here. You can get similar adapters much cheaper from Monoprice though, I am using this one because we have a bunch of them that we don't use at work.

So any other suggestions of things to try to fix the resolution switching issue? Other than this, the keyboard not working after it wakes from sleep, and an audio noise issue (that I think is cable related since I don't have the issue with headphones) this machine seems to be working...
