    For OS X get a Samsung SSD 830, for Windows get the same thing or an OCZ Vertex 4. Everything you mentioned for the non-hardware specific features will be available to OS X, except that the built-in camera is unlikely to work.

    The 5870 was a very good card. Might I suggest waiting for the GTX 660 or the 660 Ti? Full support in Mountain Lion without drivers, and equal to or more powerful than your HD 5870.

    The Nvidia GPUs you specified are in a different league compared to the 6870, but if you want something that "just works" go with the 6870. Just a question, but why not get a 3570 or a 3570K?

    To play it safe, go to 4Ghz. Then, get a dedicated cooler (I hear Noctua's are really good) and you can get to 4.6Ghz+ (probably 4.9Ghz) stable, but you'll need to edit your DSDT (check MacMan's blog).

    I agree with ggeorge. As for your Blu-Ray drive, try the LG BH10LS30. If you manage to get sleep working on your X79 board (which is possible), then know that autosleep only works when there is a disc in the drive.
