Unable to backup iPod. Console error...

When I backup, or at least attempt to backup via iTunes, It only takes like 2 seconds. It should be taking much longer seeing as it has to backup about 8gb. A quick look in finder confirms there was no backup, even though it said it was completed successfully.

If anyone has any suggestions as far as iTunes alternatives (needs to have a backup function, so I can completely get rid of iTunes), please let me know.

EDIT: iPod is recognized in System Information but no where else. All other USB 2/3, ports and devices are working fine.

You don't have it connected to a USB 3.0 port, right? If you do, it should be on a USB 2.0 port.
 
All ports treat it exactly the same.

It's seen in System Information and iTunes. It will not show on desktop if enabled to do so. It will not show in Disk Utility or Finder.

Other apps can't see it and access it, for example, xPort gives an error prompt stating: "iPod not found...".

Same thing happens in Parallels. iTunes can see it, but it doesn't do a proper backup. And also, no other apps can access it.
 
Personally, i would prefer to back up my iPhone files to local computer for a safe and readable copy. For example, for contacts and messages, notes and more, i can export them as XLS file and for pictures, i can export them as .jpg file. That is, all my iPhone data is copied on my computer so that i can use and check it anytime.

For iTunes backup, it is unreadable and i have to restore the backup to my iPhone, thus, all my recent data will be replaced by the backup then some of my new files will be gone after the restore. If I have a local copy, it won't happen again.
