Very important to run your ram in dual channel mode in the NUC. OS X will run much better.

2 x ram sticks is an absolute must!

We have some really good guides about and my belated Yosemite guide using Multibeast and Unibeast is well under way too.

Have you found the I5 cpu/HD5000 at 1.4GHZ to have any difficulty with graphics
intensive tasks like photo and video editing ? Or is it best to not use the
NUC for those purposes. Is moving up to 16GB of ram needed for it to really
perform well ? I'm sure that with a fast SSD and 8GB of ram it completely
outperforms the 499 USD Mac Mini.
 
The CPU is 1.3 with turbo to 2.6 and works very well. There will be the obvious limitations for anything too intensive but for regular dekstop work its fine. Great for a media server or similar role too.

It could probably manage photo editing though no speed awards for that of course. I only use Pixelmator for photos and thats just fine. I cant speak for video editing since its not something I do.

The ram is the same as any Mac I guess, the more you have available the smoother it will generally run. I would suggest 8Gb (2x4) to be the minimum, since you have to consider that the GPU will eat into that as well.

It runs very smooth overall though, with the personality of a MacbookAir6,2.
